March 15th for real - Ship date is March 16th.....
We had a really fun time yesterday running from one thing to another. The cooking class was a kick - there were 12 of us divided into 4 teams.... The chef gave us recipes and went over each step as he directed the whole thing... Jim got put to work cutting up chicken breasts in cubes and I was ordered to chop “scallions”..... The end dish was chicken & pineapple kabobs.....covered in a sauce we made then browned and baked.... The other team worked on a rice dish cooked in coconut milk and seasoned with herbs.... and another team made a marinade for shrimp, then grilled it..... We had to eat what we all fixed...... the chicken was better than the shrimp!... :)
After that we went to another meet & greet with the donation group where last minute instructions were given for today..... As I write we are approaching Fanning Island and will probably dock in about 45 minutes.... We are taking the medical case on shore and we should be able to meet with Nurse Kantarawa shortly after our arrival at the main reception hut right beside the pier..... The concern is the weather, it has been quite windy and stormy all night and there are dark clouds around us... tendering could be a problem.....
We just spotted the island ahead so I will post this and catch up later.....

I am excited to hear about Fanning Island and am dying to hear about the nurse and how she liked the supplies.....
